Tasting Notes: Rooibush or Rooibos (pronounced roy-boss) is from South Africa. The fragrance of the dark, burnt-orange bark and leaves of Rooibos is smokey, sweet, and spicy, evocative of a stroll through a Cedar grove or a trip to a Southern barbecue. The tea is the color of caramelized sugar with the subtle scent of saffron with smokey undertones. The flavor is like Persian pastries, with notes of cardamom, rose water, and saffron. Its long finish is very smooth. We joined our Rooibush with our China Yunnan Golden Downy Pekoe in this basket. The full, dark leaves of China Yunnan are spicy and sweet, with citrus highnotes. This tea is deep amber when brewed. To the nose, China Yunnan has the fragrance of dried, sugared orange peel. When tasted, this orange peel remains evident, but the hint of molasses joins it. China Yunnan has a dry, slightly bitter finish.
