Lapsang Souchong Black Tea
Lapsang Souchong Tea has a famously smoky aroma and flavor. To create this black tea, the tea leaves are dried in bamboo baskets over pine fires. The smokiness can be tempered by the addition of milk and sugar. Souchong tea leaves are the third and fourth leaves from the top of the tea bush, below the tea bud, and orange pekoe. They are followed by the Congou tea leaves. Use 2 teaspoons per 12 to 16 oz pot. Use Boiling (212ºF.) water. Steep for 2 to 3 minutes. 10 servings per ounce |
